It’s a dreary day in Austin, Texas, and the icy rain is making it hard to venture out. But inside our home, the warmth and comfort of a delicious soup is filling the air. Today, I’m sharing a family favorite – Potato Soup with Sour Cream.
I remember the first time I made this soup. It was a cold winter evening and I was looking for something hearty and filling to make for dinner. I raided the pantry and fridge and found some potatoes, onions, and cream. I decided to make a simple potato soup, and it turned out to be a hit with everyone.
Fast forward a few years, and this soup has become a staple in our home. Whenever the weather turns chilly or we’re in need of a comforting meal, this soup always comes to the rescue. It’s easy to make, and the sour cream adds a tangy twist that sets it apart from other potato soups.
POTATO SOUP with Sour Cream
Ingredients
- 1 tablespoon cooking oil
- 1 cup chopped white onions
- 1/2 cup slice of celery
- 6 cups potato cube slice
- 3 cups whole Milk
- 1 1/2 cups chicken broth
- 1 teaspoon salt
- 1 cup Sour Cream
- 2 tablespoons all-purpose flour
- *garnish optional
- bruschetta toast
- Crispy bacon bits
- triple cheese
- spring onion
Instructions
- In a large pot, heat the cooking oil over medium heat.
- Add the chopped onions and sliced celery to the pot and cook until the onions are soft and translucent about 5 minutes.
- Stir in the cubed potatoes, milk, chicken broth, and salt.
- Bring the mixture to a boil, then reduce heat and let it simmer until the potatoes are tender about 40 minutes.
- In a small bowl, whisk together the flour and sour cream until smooth. Use a potato smasher and add the sour cream mixture to the soup.
- Cook the soup until it thickens, about 5 minutes, stirring occasionally.
- Serve the hot soup and garnish with bruschetta toast, crispy bacon bits, triple cheese, and green onion, if desired.
- Yields: 6 servings. Enjoy!
